8 Ingredients for a Light Fruity Summer Salad - Bosc Pear & Pecan Salad

This is a quick and refreshingly light summer salad with a new take on ingredients. Building a salad can feel complicated when thinking of new toppings, so, this recipe takes the work out of guessing and results in a yummy outcome!
If you're in a hurry, store-bought salad dressings are the way to go. I'm really loving the Panera - Apple Fuji Vinaigrette and I highly recommend giving it a try! You can substitute any dressing you would like if you have allergies or are seeking a slightly different flavor profile but it should still compliment the pears. A balsamic, lemon balsamic, poppy seed, or oil and vinegar would all be great options.

There are no rules to salad making so get creative with your ingredients and do what sounds good to make it your own. Think protein and fiber to keep your cravings managed and body happy.
Here's a deliciously healthy, 8-ingredient recipe that makes this salad sweet, aromatic, and crunchy, leaving you feeling full and satisfied.
SERVING SIZE - Serves 1 as an entree salad or serves 2-3 for a side salad.
INGREDIENTS
2.5 oz Mixed greens of choice - about 2 handfuls
½ ea. Bosc pear - diced
⅓ cup Chick peas (garbonzo beans)
¼ cup Pecans (raw or roasted)
¼ ea. Shallots - sliced thin lengthwise
1 slice CHAO vegan cheese slices - cut into small pieces
1 tsp Chives - sliced
3 Tbsp Fuji Apple Vinaigrette from Panera - in the refrigerated section of produce
INSTRUCTIONS
Prepare all ingredients to measurement or as desired to taste.
Mix all ingredients in one bowl except the mixed greens and dressing.
Plate greens as needed and evenly distribute mixed toppings over top.
Lightly drizzle dressing to evenly cover. Enjoy!
