Awarded externship through my own home-based allergen-friendly cookie business, GAIA Cookies.
GAIA Cookies was a product of my piqued educational experience while focused on the Farm-to-Table curriculum. Awareness of food sourcing, production, and the growing adverse effects on the health of the world created a mission to design a snack that could be enjoyed by the growing number of people with food-associated allergies and intolerances.
Recipes were countlessly tested for aroma, taste, and texture. All ingredients were carefully researched and selected to prevent safety risks of cross-contamination. This final recipe was tested by a USDA-accredited lab. To ensure product reliability.
Boots on the ground with this experience have provided an in-depth view of the importance of 1) food safety and 2) a delicious final product for the consumer.

MY EXPERIENCE
My background in web design and marketing came into play with GAIA Cookies, a product of my piqued interest while attending Auguste Escoffier School of Culinary Arts and learning about the Farm-to-Table curriculum. My mission to design a delicious snack that could be enjoyed by the growing numbers of people with food-associated allergies and intolerances was born.
GAIA Cookies are vegan, no artificial dyes, and are free from gluten, peanuts, tree nuts, soy, eggs, dairy, oats, corn, and xanthan gum(Celebration Cookie contains corn).
All ingredients were carefully researched, reliable brands, mostly organic, and all non-GMO selections to prevent safety risks of cross-contact and tested by a USDA-accredited lab. This experience got me excited about promoting other food products out there made by people like me. Now I bring my expertise to you.
